Christmas Butterscotch Haystacks

I never tasted a butterscotch haystack until my husband and I were dating. I know, after tasting one, I realized I had been missing out all these years. My mother-in-law makes them every year and they are delicious. The butterscotch chips, creamy peanut butter, and crunchy chow mien noodles are divine! They are my kiddos favorite Christmas goody and I always have to hide a batch in the freezer. I hope you enjoy making these easy and yummy treats.

Christmas Butterscotch Haystacks


  • 1 cup of butterscotch morsels
  • 1/2 cup of creamy peanut butter
  • 2 1/2 cups of chow mien noodles


  • Melt butterscotch morsels and peanut butter in a saucepan on low.
  • Stir constantly until butterscotch and peanut butter are smooth and creamy.
  • Add noodles 1 cup at a time coating all the noodles with the mixture.
  • Drop candy by forkfuls onto parchment or wax paper.
  • Cool until set.
